Ingredients
1.5 cups mashed ripe bananas (~3 medium)
1/3 cup maple syrup
1/3 cup coconut oil, melted
1 teaspoon vanilla
1 cup sünabloom sunflower yogurt
2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
optional: 1/2 tsp ground cinnamon
Instructions
Preheat the oven to 350 F.
Line a 9x5x3-inch loaf pan with two strips of parchment paper (or grease only the bottom of the pan).
In a large bowl, mix the bananas, maple syrup, coconut oil, vanilla and sünabloom yogurt until relatively smooth.
In another bowl, whisk together the flour, baking soda, salt and cinnamon.
Mix the dry and wet ingredients together until just fully combined. Pour the batter into the loaf pan.
Bake for 1 hour or a few minutes longer until a toothpick comes out clean.
Cool for about 10 minutes and then remove the loaf from the pan to cool completely before slicing (about an hour).
