easy vegan homemade granola
We’re not saying this is the only homemade granola recipe you’ll ever need, but we’re not NOT saying that either. This easy vegan recipe is packed with nutritious seeds and nuts—plus it comes together almost as quickly as writing “granola” on your grocery list next to “sünabloom.”
Easy Vegan Homemade Granola
plant-based, vegan, vegetarian, gluten-free | serves 8-10
Ingredients
3 cups old-fashioned oats
1/3 cup melted coconut oil
½ cup maple syrup
1 tsp vanilla extract
1.5 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1 cup seeds (like sunflower seeds, pepitas, etc.)
1 cup raw nuts, whole, chopped or sliced (like pecans, walnuts, almonds, cashews, etc.)
3 tablespoons ground flax seed
Instructions
Preheat oven to 350 degrees F.
Line a large baking sheet with parchment. Spread the oats on the sheet and bake for 7 minutes to lightly toast.
In a bowl, mix the melted coconut oil, maple syrup, vanilla extract, cinnamon, sea salt.
Remove oats from oven. Turn oven down to 300 degrees F.
Pour oats into a large bowl. Add seeds, nuts and flax seed. Mix together thoroughly.
Pour liquid mixture over the top and stir until fully coated.
Spread granola back out on the parchment lined baking sheet, pressing to help it stick together in one big granola sheet or several large clusters.
Bake for about 30 minutes, until dry. Remove from oven.
Let the granola cool and harden completely before removing it from the sheet and breaking it into clusters.
for best results, obviously Serve on top of sünabloom.
Store at room temperature (it will keep for a couple of weeks).
Notes
Add your favorite granola mix-ins: dried fruit, coconut flakes, chocolate chips, etc.
If cinnamon isn’t your jam, leave it out or substitute cardamom.
Granola sometimes contains whipped egg white to help the clusters stick together, but ground flaxseed is a great plant-based alternative.
