Easy Vegan + Grain-Free Zucchini Brownies
vegan, gluten-free, vegetarian, dairy-free, egg-free, grain-free | makes one 8x8 pan
Ingredients
1/4 cup sünabloom sunflower yogurt
1/2 cup unsweetened nut butter (we used almond)
1/4 maple syrup or coconut nectar
1 cup shredded zucchini (do not squeeze out water)
1/4 cup of cocoa powder
2 tbsp ground flax seed
3/4 tsp of baking soda
1 tsp of vanilla extract
1/3 cup of vegan chocolate chips (+ a few more to sprinkle on top)
flaky sea salt
Instructions
Preheat oven to 350°F.
Line an 8x8 baking pan with parchment paper (alternatively, grease the pan with coconut oil).
Mix all ingredients except chocolate chips in a large mixing bowl. Stir until well combined, then fold in chocolate chips.
Pour batter into baking pan and spread evenly using a spatula. Sprinkle the remaining chocolate chips on top and sprinkle with flaky sea salt.
Bake for 30-32 minutes. Cool completely before cutting.
Once cooled, store these brownies in the fridge.
