easy vegan + grain-free zucchini brownies

Our good friend Nicole Nelson, a certified holistic life coach from “living well with nic,” created a naturally sweetened and wonderfully delicious recipe for zucchini brownies. Treat friends, family or just yourself with this vegan and gluten-free dessert!

Easy Vegan + Grain-Free Zucchini Brownies

vegan, gluten-free, vegetarian, dairy-free, egg-free, grain-free | makes one 8x8 pan

Ingredients

  • 1/4 cup sünabloom sunflower yogurt

  • 1/2 cup unsweetened nut butter (we used almond)

  • 1/4 maple syrup or coconut nectar

  • 1 cup shredded zucchini (do not squeeze out water)

  • 1/4 cup of cocoa powder

  • 2 tbsp ground flax seed

  • 3/4 tsp of baking soda

  • 1 tsp of vanilla extract

  • 1/3 cup of vegan chocolate chips (+ a few more to sprinkle on top)

  • flaky sea salt

 

Instructions

  1. Preheat oven to 350°F.

  2. Line an 8x8 baking pan with parchment paper (alternatively, grease the pan with coconut oil).

  3. Mix all ingredients except chocolate chips in a large mixing bowl. Stir until well combined, then fold in chocolate chips.

  4. Pour batter into baking pan and spread evenly using a spatula. Sprinkle the remaining chocolate chips on top and sprinkle with flaky sea salt.

  5. Bake for 30-32 minutes. Cool completely before cutting.

  6. Once cooled, store these brownies in the fridge.
